Abstract: 荠菜亦可当灵丹荠菜又叫菱角菜、香善菜,是一种浅绿色、开白花的野菜。它既是蔬菜中的佳品又具有很高的药用价值,故有“三月三,荠菜当灵丹”的民谚。荠菜遍布我国南北各地,喜暖耐寒,生命力很强。采摘后的鲜菜和晾置后的干菜均可入肴。荠菜的烹制方法很多,可拌、可炒、可烩、还可以做馅。用来烹制的荠菜拌香干、荠菜炒鸡片、荠菜春豆腐等都是深受人们喜爱的佳品。
