Abstract: 黄粉虫是一种蛋白质含量丰富的优质昆虫蛋白资源,其蛋白不仅氨基酸种类齐全,而且具有独特的香味和鲜味。文章对酶法提取解黄粉虫蛋白进行了研究,结果显示复合蛋白酶与风味蛋白酶两者结合使用提取效果最好,其提取最佳条件先为复合蛋白酶1.4%、pH值7.5、酶解温度55℃、液固比(mL/g)6∶1、提取时间30min,后为风味蛋白酶5%、pH值7.0、55℃、液固比(mL/g)6∶1、提取时间8h。
