Abstract: 本文对66株金黄色葡萄球菌进行了耐热性观察,其结果80℃30分钟和90℃5分钟100%存活,100℃3分钟仍有43.9%存活,这和过去对该菌耐热性的认识有所不同。实验还表明,高温灭菌器可有效地杀灭葡萄球菌,是消毒牛奶的理想方法。本文为食品卫生管理和预防葡萄球菌食物中毒提供了科学依据。
