Abstract: 为研究初始pH、蛋白胨浓度和不同发酵底物对枯草芽孢杆菌生长的影响,对不同发酵底物进行液态和固态发酵试验,结果发现,pH为6.5~7.0时,细菌生长最快,pH为7.5~8.0时,蛋白酶的活性最强;蛋白胨1.6 g·L-1的LB培养基,枯草芽孢杆菌的生长状况最好,蛋白酶的活力也最强;豆粕是优质氮源,能显著促进枯草芽孢杆菌的生长和蛋白酶活性,豆粕20%、豆渣10%、麸皮60%和玉米粉30%作为固态发酵底物,枯草芽孢杆菌的生长速度最快,豆粕10%、豆渣10%、麸皮50%和玉米粉10%为固态发酵底物,枯草芽孢杆菌分泌的蛋白酶活力最强.
